Our olive groves comprise approximately 25,000 olive-trees with absolute prevalence of "moraiolo" variety, and some minimal parts of "leccino" and "frantoio". These olive trees are situated 350 to 600 metres above sea level on the hills of Foligno, in the heart of the Umbrian region, between Assisi and Spoleto. The olives are handpicked before their complete maturation, and are immediately processed at our own oil-mill. The time factor is determinant. In fact, the very low acidity of the resulting olive oil depends on the cold extraction and on the timeliness of the processing in regard to the collection of the olives.
